1. 300 F - 2.5 hours
2. pour oil out
3. finish with sauce
4. oven with 5 mins with a lid open
5. turn over and base the side and leave 5 mins
*spices : 1/4 cup brown sugar, 2 ts chill powder, 2 ts paprika, 1ts salt, 1ts mustard, 1/2 ts garlic, 1/2 ts onion powder, 1/4 ts pepper
